It’s seriously HOT outside today and we’re all looking for ways to cool off! So I decided to experiment with some quick and easy dairy-free ice lollies. I was keen to use what I had to hand in the refrigerator and cupboard. So, I blended equal amounts of coconut milk from a can and some fruit smoothie I bought at Asda. Well, I say I did it but actually, the girls did it, with a little supervision. There are tons of dairy-free ice creams and lollies out there but sometimes it’s just fun to experiment and make your own.
I don’t always have space to have ice lolly molds upright in the freezer, so I found some that neatly stack on top of each other. They are a slightly smaller size, which suits us, although there is a larger size. I also found some that looked like twister-style lollies. They look pretty good. However, with the twister style you need to put them on something to keep them flat when filling them and moving to the freezer. I used the lid of tupperware style lunch box. I left them on it when filling and in the freezer. The results were pretty good for a first attempt but the twister-style molds were definitely more fiddly.
I think the point I’m trying to make, is that quite often, you have the ingredients at hand, or not far away, to create things yourself. You don’t always need to reach for the specialist ‘free-from’ products out there. I’m going to experiment some more and will post some suggestions for different recipes. I really liked the Lékué molds which produced the perfect sized ice lolly for us. I love that the sticks are reusable and you can buy extra sticks so you can make plenty of lollies from the same molds. Just pop them out once frozen and make more with the extra sticks. Great for parties!
