I used to LOVE making Easter Cornflake Cakes when I was younger. It’s an easy activity to do with children and is easily adapted to being dairy-free or vegan cornflake cakes. There are loads of recipes out there, so this is just my spin on making them dairy free.
Which dairy-free chocolate should I use?
In the first instance, you need one that is safe for your requirements. Other than that you can choose whichever dairy-free chocolate you want. I have previously used some high in cocoa solids content cooking chocolate from Tesco but it does carry a may contain warning which is not suitable for everyone. At the moment I am using some chocolate produced by Plamil, which specialises in dairy free and free from chocolate. The reason I have this chocolate is that I have been making various dairy-free chocolate treats for Easter.
Ideas to make them more interesting
- Use dairy free chocolates such as Doisy & Dam Good Eggs to top them off.
- Make them in different shapes, such as the flower pots I have used for some of them

A word about melting dairy-free chocolate
Whenever you are melting chocolate, you should always melt it very gently to avoid overheating it which can cause it to seize. Keep in mind that chocolate does not really like water (or steam), so unless you are making a recipe that specifically requires mixing water and chocolate then you should ensure that the chocolate stays away from sources of moisture.
When melting dark chocolate you are unlikely to have problems. However, when you are melting a dairy-free ‘milk’ or ‘white’ chocolate, you do need to do this very gently. If they are overheated they can get in a real mess. The point I’m trying to make is that whilst this recipe doesn’t take long, make sure you take the extra few minutes to melt the chocolate carefully over low heat to avoid any mishaps!

- Saucepan
- Mixing spoon for saucepan
- Spoon for dividing the mixture
- Cake cases (fairy cake size are best)
- Tray
Dairy-Free Easter Cornflake Cakes
Ingredients
- 250g dairy-free chocolate
- 80g dairy-free baking block
- 3 tablespoons golden syrup
- 180g cornflakes
Method
Add the dairy-free chocolate, golden syrup and baking block to a large saucepan and gently melt. Do not be tempted to speed this up as the chocolate may seize. Once melted then carefully stir to mix. Gently fold in the cornflakes and mix until properly coated in chocolate.
Place the cake cases on a tray or plate. Spoon mixture into cake cases and gently press the mixture together in the cases. Top with dairy-free mini eggs or any other toppings you wish. Allow to set in a cool place before eating.
Allergens. Manufactureres can and do change their ingredients and processing without notice. All ingredients should be checked every time with regard to specific allergens. Take not of any ‘may-contain’ warnings if you are at risk from cross-contamination.
Cornflake Cakes - Dairy Free
Ingredients
- 250 g dairy free chocolate
- 80 g dairy free baking block
- 3 tbsp golden syrup
- 180 g cornflakes
Instructions
- Add the dairy free chocolate, golden syrup and baking block to a saucepan.
- Melt very gently over a low heat. Do not be tempted to speed this up as the chocolate may seize.
- Once melted then stir with a spoon to mix.
- Fold in the cornflakes until properly coated in chocolate.
- Spoon into cake cases and press together to ensure they stick together properly.
- Top with dairy free mini eggs or any other toppings you like.
- Allow to set in a cool place before eating.
