What do you think of these bars then? My younger daughter loves to bake and made this dairy free granola bars recipe, inspired by a recipe for Chewy Granola Bars at Tasty.co. They taste AMAZING and would definitely make again. They are totally dairy free snack bars.
She adapted the recipe to use ingredients we had in the cupboard. Also checked all the labels herself, which helps develop independence. We are going to look at ways to adapt the recipe further and replace the peanut butter, but it really binds the ingredients together well and if you can have peanuts, we think this is a winner! Great dairy-free snack.
Below is the Dairy Free Granola Bars recipe my daughter adapted. We hope you love them as much as we do. x
Dairy-Free Peanut Butter, Chocolate Chip and Oat Granola Bars
Ingredients
- 250 g rolled oats
- 75 g puffed rice cereal
- 110 g brown sugar
- 100 ml sunflower oil
- 170 g runny honey
- pinch salt
- 1/2 teaspoon vanilla essence
- 120 g peanut butter (We used crunchy peanut butter as that is all we had.)
- 90 g dairy-free dark chocolate chips (We used the kind you can buy in the supermarket baking aisle.)
Instructions
- Grease and line an oven proof dish with parchment paper. We used a 20cm square tin, lined with parchment paper. Pre-heat the oven to 180C or Gas 4.
- Combine all the ingredients in a mixing bowl, apart from the peanut butter and chocolate chips.
- Gently warm the peanut butter in the microwave a few seconds at a time to soften it slightly, making it easier to mix in. Stir the peanut butter and chocolate chips into the mixture, ensuring they are evenly distributed through the mixture.
- Press the mixture down firmly into the tin and bake for 8-10 minutes until starting to go crisp at the edges.
- Once you have removed the tin from the oven, allow granola to cool completely in the tin. We left it overnight.
- Optional: If you have any chocolate left over, you can melt it gently in the microwave and drizzle over the top. Allow to set completely if you do this, before turning out and cutting as required. Use a sharp knife and wipe between cuts to make it easier.
