Being dairy-free doesn’t always have to be difficult, but maybe you are juggling a busy lifestyle? School-age kids? Work? Throw in a dietary requirement and things can very easily start to get stressful when you are thinking about family meals. I’m always looking for ways to make life easier so anything I can throw into my slow cooker for a family-pleasing meal is a big win for me. So how about Dairy-Free, Pulled Pork, in your slow cooker? It’s quick, cheap, and easy.
Short-Cut
OK, hands up, I do cheat a bit in the recipe but for me, that is the joy of it. No messing around with a teaspoon of this spice and half a teaspoon of something else. This is super quick to prepare although not so quick on the cooking as it is intended for the slow cooker. Put it in the pot, turn it on and go about your day. So, I highly recommend you try a packet of Schwartz Slow Cooker BBQ Pulled Pork.
Ingredients
In addition to the Schwartz sachet, you will need ketchup, brown sugar, cider vinegar or white wine vinegar, and of course some pork. Approx 1.4kg boneless pork shoulder. To Serve
To serve, why not use some dairy-free bread rolls with some coleslaw on the side. There are a number of bread rolls out there now which are dairy-free, so you should be able to find something suitable, either in the main aisles or in the Free-From section. I went with Warburton pre-sliced white rolls, not my first choice for a roll, but that was all that was available. They do carry a may contain warning for dairy which I appreciate is not suitable for everyone. Served with some dairy-free coleslaw on the side and it’s a very easy meal. I couldn’t get any at the time so made do with another brand, but I have to mention the Co-Op extra creamy coleslaw which we love. It is dairy-free, although it does have egg in it. It would be my coleslaw of choice to go with this.
This easily serves eight people which sounds but it does freeze OK, so you can save some for another time. Enjoy x
